Boursin Mashed Potatoes

Boursin Smashed Potatoes

2 1/2 pounds Yukon gold potatoes, quartered
6-10 garlic cloves, peeled
1 (4.4 ounce) container of Boursin Garlic and Herb Spread
4 tablespoons butter
1 cup half-and-half
Salt and pepper to taste

Add potatoes and garlic to salted cold water just to cover. Boil 20-25 minutes. Drain potatoes (do not discard garlic).

Place potatoes on a sheet pan and place in a 400 degree oven for 15 minutes (this dries out the potatoes and gets rid of all the water so the potatoes can soak up more milk and good stuff).

Smash together potatoes, garlic, Boursin, butter, half-and-half, salt and pepper with a hand mixer, potato masher or fork until almost smooth.
