Hummus
4 peeled garlic cloves1/2 cup chicken broth (or more to desired consistency)
1/4 cup fresh lemon juice (juice from 1 large lemon)
1/2 cup tahini (sesame seed paste)
2 tablespoons extra virgin olive oil
2 (15-ounce) cans chickpeas (garbanzo beans), drained and rinsed 1/2 teaspoon kosher salt 1/4 teaspoon black pepper
Place garlic in a food processor. Pulse about 20 times or until garlic is minced. Add chicken broth and lemon juice. Process for 30 seconds. Add tahini and olive oil to processor. Process until smooth, about 1 minute (scrape down sides with a spatula as needed). Add chickpeas, salt and pepper. Process until smooth, about 2 minutes.
