Maple Roasted Beets
2 pounds beets
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon pure maple syrup
Preheat oven to 425°. Peel beets with a potato peeler. Dice into 1/2 inch chunks and place in baking dish. Add olive oil, salt, pepper and maple syrup. Toss to coat. Bake for 45 minutes.
